Non-stick cookware is a blessing when cooking and reheating sticky kinds of food. This coated surface also means you will need less oil or fat while frying on it. But you have to be careful while using and washing non-stick cookware. Avoid scratches on the surface or it?ll lose its properties.

Cast iron is comparatively inexpensive, conducts heat evenly and once heated, keeps it for a long time. Such cookware is good for deep-frying and slow cooking. The main problem is that it rusts, stains and becomes pitted when exposed to air, moisture and certain foods.

Lined copper cookware is quite expensive, though has a number of advantages. It conducts and responses to heat very well, cools down quickly when removed from the heat, preventing food from burning and becoming overdone. Copper cookware is a good choice for many cooking methods. The main problem is that copper interacts with everything it comes in contact with.

Is Your Cookware Poisoning You?


For over 40 years scientists have known that the fumes from hot non-stick surfaces can kill pet birds such as canaries. So just how dangerous are they to you?

Several studies have been conducted into health concerns surrounding Teflon, the coating invented and patented by DuPont.

While the lethal effect on birds is well documented and not in dispute, much of the other evidence tends to be anecdotal at best. And some of it is downright confusing.

Whatever the truth of that may be, it’s certainly accurate to say that there have been a number of health issues emerging in the community immediately adjacent to the DuPont factory in Parkersburg, West Virginia; more about that later.

There also seems to be some disagreement among authorities as to the temperatures at which the bird-lethal fumes are given off. These are quoted as ranging from 285°F to 475° and more.

Since both these figures are well within the smoke points of edible oils such as avocado and safflower, keeping your budgie in or near the kitchen is definitely not good for his health.

But what about your health?

Human victims have complained of flu-like symptoms, some leading to respiratory complications, after using non-stick cookware. Some reactions have been reported as severe.

At least one report suggests that the fumes may be cancer inducing after prolonged exposure, although none suggest that Teflon itself is harmful if swallowed.If the fumes are harmful to humans, then there is much more to consider than just kitchen items.

Although experts say you get better results with uncoated cookware, most admit it's nice to have a nonstick skillet on hand for eggs and pancakes. Farberware Millennium Nonstick skillets contain a fully encapsulated aluminum disc bonded with stainless steel allowing for even heat distribution.

Qualities of non-stick coatings





Non-stick coatings have varying qualities of non-stick coatings are manufactured for bonding to the surface of utensils. Their advantages include considerable ease in cleaning and reduction of the need for grease in your cooking. Their disadvantages are that they may become too easily damaged by spatulas, spoons, forks, etc., especially metal ones, and that their durability has a short life expectancy. Even the newest non-stick coatings will begin to lose their resistance to sticking after only a few years; sooner if the pan is constantly overheated or cleaned in the dishwasher or with harsh detergents. Be sure to follow the manufacturer's instructions on using and caring for your non-stick pan; you may be surprised to learn that the warranty may be voided if the utensil is overheated or cleaned in the dishwasher.

One of the biggest problems faced while selecting nonstick cookware is that in most every pan the nonstick coating always seems to scrape off despite using all the cooking and cleaning instructions. So I decided to so some online research, and picked up some pointers on how to pick up a really good nonstick pan.
It seems that all good nonstick coatings are made with the basic ingredient, PTFE, or polytetrafluoroethylene. Though this is supposed to have excellent nonstick properties, it's also very soft and therefore scratches easily. Which is why it has to be mixed with other materials in order to make it harder. The difference between different nonstick brands lies in the proportions in which PTFE is blended with other materials.

Better cookware, on the other hand, starts with a similar blend which sticks to the pot, but then adds extra layers where the proportions are changed. The second layer is formulated to stick to the first layer, but has improved nonstick properties. The third layer is enhanced even more, so that it sticks to the second layer, and has even better nonstick properties. Three layers is supposed to be the minimum for good, long-lasting nonstick cookware. The very best nonstick cookware in the world has seven layers.
